Our red wines are vinified according to traditional methods. The grape harvest is done consistently by hand, sometimes in several passes from early October to November. So we get perfectly ripe, but at the same time healthy berries. These are separated from their stem and fermented by classical mash fermentation, sometimes over several weeks. All red wines are stored in wooden barrels. Secondary wines mature in large oak barrels or in old barriques, the top qualities in younger or new oak barrels. The storage time is between 16 and 20 months.

The white wines are primarily reductively aged in stainless steel or old oak barrels. All grapes are harvested by hand. After the berries have been removed from the stems, a variable maceration time is made depending on the quality and type of wine. Then, without pumping, they are brought to the pneumatic press by means of pure drop pressure and pressed very gently. The musts are fermented gently at below 20 ° C fermentation temperature partly spontaneously, partly fermented with pure yeasts. This ensures a fine varietal aroma, a powerful body and a very good shelf life.
