    a small operation idea

    We have been passionately active in our own beekeeping for over 40 years.

    In addition to the variety of honeys, which unfortunately are very limited in northern Germany, we have tried from the beginning to offer a wide range of first-class and world-famous types of honey, which we could unfortunately never harvest in an agricultural landscape with rapeseed as the main cultivar, i.e. in northern Germany.
    Many of these varieties are said to have special properties, such as thyme or Manuka honey and almost all of them have become classics, which means that we have had these varieties in our range for 30 years.
    We ourselves keep beekeeping with very large, one-room incubators, thus preventing the brood nest from breaking open and thus minimizing the disruption to the bees` inspection. In addition, for reasons of time, we are reducing interventions in the bees to an absolute minimum, which is very pleasing to the bees!
    The honeycomb or honeycomb attachments are semi-honeycombed and only serve to absorb the nectar or honey. This serves the quality and purity of the honey, because the honeycombs can never be used as brood combs and the honeycombs can never get from the brood chamber into the honey chamber.
    Of course, like about 90% of the world`s bee population, our boxes are made of natural wood and so are the frames.
    For aesthetic reasons, we never use plastic boxes or plastic honeycombs.
    Yields can only be expected if you offer the bees optimal conditions where possible (the environment is another topic) and the nature of the bees.
    Most of our bees have free time after the linden tree in the summer and can buy honey supplies for the winter, collect a lot of pollen and build up a protein-fat supply in the body for the winter so that they can supply the first spring bees.

    All our honeys are basically never mixed (blinded or stretched) and never filtered but imkerlich traditionally strained and were not küstlich reduced in water content.
    We use a very gentle filling process where the honey must be heated rarely above 20 degrees.
    All honeys - especially the honey outside the EU - are repeatedly examined to determine that they comply with the purity requirement of EU Regulation honey.
    In particular, no traces of the pesticides or antibiotics may be in the honey.
    More often it can happen that a variety is temporarily not available, because we do not like the quality. We have developed a very good memory, like a sort of honey should taste.
    Incidentally honey pleasure always means active environmental and nature conservation, because honey paragraph keeps the bees alive.
    Beekeeping requires no land, honey is not cultivated, it is not fertilized and wrapped no floor and there are no pesticides applied.
    The pollination of bees - which is done by the way, can be rated on the thumb with the 10 times the price of honey.
    This benefits not only gardeners, farmers and fruit growers, but also wild animals that live on the fruits that were pollinated by bees.
    Since April 09, we have our old solar system coupled with a new roof system and use so enhances the solar heat for heating honey. (Located in each honey jar least 0,1 - 0,2 kWh heat energy). Our electricity is purchased from Lichtblick (Natural Power).

    The question of whether it was honey, liquid, soft, grained or hard is / is, is very important for many of our customers. Approximately one-third want honey fixed prefer, another third liquid and the others want the honey grainy, so candied coarse. There is a law of nature: Every honey is determined sooner or later.
    Cool temperatures accelerate a festival are (carding), warmer temperatures slow down the same. There are also species dependent Kandierungsgeschwindigkeiten.
    In all honeys, where fructose predominate as acacia or forest honeys a candying up to 2 years lasts. In honeys with an emphasis on glucose (rapeseed, clover, wild flower etc) a candying control occurs within a few days. These fast honeys the natural water content determines whether the honey firm or soft candied. Whether a honey has a higher or lower water content, depends on the time of harvest (honeycomb maturation) .This must in any event - according honey regulation - less than 18%.
    A dry honey holds virtually endless and will never ferment.
    Tip: To quickly set a honey - be - want to you should ask him coolly. If you want to liquify a solid honey, you should never place it on a heating. That brings little respect liquefaction, but damages the honey enzymes.
