The grandfather of Jose M. Valderrama founded 1920 the first olive oil factory on the site of the family-owned finca in Montilla, 50km northeast of Cordoba. Today, the property comprises 273ha with 75,000 olive trees. Together with a mechanic, Jose Valderrama devised a revolutionary process for extracting olive oil, which led to the creation of completely new production facilities. From the olive harvest to the first flow of fresh olive juice barely 45 minutes, which ensures maximum flavors, taste, vitamins.
