Very mild, slightly sweet taste with a touch of green wood and the typical reverberation of oil. Very good for strong gazpachos, tomato salad, meat, meat dishes and strong fish. Jose M. Valderrama`s grandfather founded the first olive oil factory on the grounds of the family-owned finca in Montilla, 50 km northeast of Cordoba, in 1920. Today the property covers 273 hectares with 75,000 olive trees. Together with a mechanic, Jose Valderrama devised a revolutionary olive oil production process that led to the construction of completely new production facilities. It hardly takes 45 minutes from the olive harvest to the first flow of the fresh olive juice, which guarantees a maximum of aromas and flavors.
