Zatar is a popular spice preparation in the eastern Mediterranean and north-east Africa. The main ingredients are thyme, sumac, sesame and salt. Zatar can be easily eaten with bread dipped in olive oil and yogurt. Salad dressings or yoghurt sauces can be seasoned with zatar. The spice preparation also refines roasted and grilled lamb, poultry or fish dishes.
