2020 Riesling sparkling wine, brut, 11.5%, winery on the Nile

The sparkling wine base wine for this great Pinot sparkling wine was harvested in August 2020. It consists of 2/3 Pinot Noir and 1/3 Pinot Blanc grapes. The pressing and vinification took place without the addition of sulfur; the winemaker only adds a small amount of sulfur during disgorgement. After an initial traditional bottle fermentation of 12 months, the sparkling wine is partially disgorged. The remaining sparkling wine continues to rest on the yeast, which gives it an even finer bubble. An excellent companion for special moments!
