We phased out the cheeses at about four weeks from the wide range of Crottin ripening. They are not yet completely dry, with a white core. The taste is already spicy. Salt and yeasty undertones are part of it, as well as tart notes of ripe mold. The dough is already slightly crumbly (chalky). For example, the Sancerre, a white wine from the region, goes well with the Crottin. Apart from pure enjoyment, the Crottin baked on a salad is a classic (Chevre chaud). Another hot tip: top the fish fillet with thin slices on a bed of vegetables and bake.
