Orange peel is made from the oily peel of bitter oranges, also known as bitter oranges. Processing it into orange peel is relatively complex: half salted fruits are desalted, blanched, the core is removed and the peels are then candied in a sugar solution. Orange peel is bright to deep orange, slightly brownish. The taste is sweet, with an aromatic bitter note. Use as a baking ingredient for small pastries such as Florentines or in Christmas baking.
