Citronat is made from the peel of the cedrat lemon (Citrus medica L.). A single one of the strongly fragrant fruits can weigh up to 3 kg. The main growing areas include Sicily, Greece and Corsica. Processing it into citron is relatively complex: the salted, half fruits are desalted, blanched, the core is removed and the peels are then candied in sugar solutions. The taste of citron is sweet and aromatic and spicy. It is used as a baking spice or baking ingredient and should always be stored in a cool and airtight container, otherwise it will harden.
