Lecithin is a vegetable emulsifier that is extracted from soy lecithin and is ideal for making foams. It also has amazing properties as a sauce thickener for hopeless cases. Lecithin is very economical. Adding only 0.6% of the weight of the liquid lecithin produces a stable foam, ie use approx. 6 g of lecithin for 1 kg of liquid. For media containing alcohol, lecithin is less suitable; it is better to use SucroAir here. Lecithin is soluble in cold liquids. It is highly soluble in water, but loses its effectiveness in fatty media.
