Like the cream on the milk, this special selection of the Flor de Sal forms as the first layer on the brine and is skimmed off from there by hand every day. In order to preserve the delicate, flaky crystals, Flos Salis® is carefully bottled in exclusively manufactured containers. The Tellicherry pepper is made from fully ripe, red pepper berries, which are fermented with the whole pulp and dried. The pepper is black, but not deep black, but has a rather pleasant deep brown color. Through this process, the aroma has developed even more clearly: The fully ripe peppercorns have assumed a pronounced nutty taste, but also a strong sharpness. The field of application of this pepper is primarily to be found in dark meat such as game and beef, but also in chocolate desserts.
