Citronate is made from the shell of Zedratzitrone (Citrus medica L.). One of the strong fragrant fruits can weigh up to 3 kg. The main growing areas include Sicily, Greece and Corsica. The processing to citronate is relatively time-consuming: the salted, half-fruits are desalted, blanched, freed from the core housing and the bowls then candied in sugar solutions. The taste of citronate is sweet and aromatic-spicy. It is needed as a baking spice or baking ingredient and should always be stored in a cool and airtight container, otherwise it will harden.
