Alain Milliat is in love with the taste of fully ripe fruit. The Frenchman from Orlienas near Lyon works closely with the fruit growers who deliver his fruits to him at exactly the right time. Milliats employees check their ripeness every day in summer before they can be harvested. In July, the Bergeron variety apricots were picked for this jam. They grow south of Lyon. Their taste is fresh and fruity and typical with a slight acidity of 63% fruit.
