  • Olio Calvi from Liguria

    MOSTO ORO AND LUCINASCO = 100% TAGGIASCA
    Imperia is now the main olive oil trading center in all of Italy. Since 1919, the Calvi family trading house based there has been one of the most important players in terms of quality. Today they not only trade in the best olive oils, they put together excellent blends, have their own olive plantations and a modern mill. Calvi`s flagship oil is Mosto Oro, a single-variety oil made from late-harvested Taggiasca olives. It has been the first choice of top German chefs for over 20 years. The second flagship is Lucinasco, made from olives that grow exclusively around the town of Lucinasco, at an altitude of 500 m. The oils are mildly fruity and ideal for fish and vegetable cooking.

    MOSTO ARGENTO = BEST BLEND
    Cold-pressed cuvee from Taggiasca and other Italian olive varieties. The oil can be used in many different ways. It is very harmonious, pleasantly spicy and has a fine fruit.

    PINZIMOLIO
    The cold-pressed and unfiltered cuvee from Taggiasca and Ogliarola has the fruity-green taste of not yet ripe olives. Light bitter notes and spiciness make it an ideal salad and starter oil.

    Drip oil and cru oils
    The Carte Noire drip oil is a special feature. Green, unripe and black, fully ripe olives are ground between granite stones and the resulting paste is spread on mats. The oil ultimately flows out of the olive pulp without any pressure due to the weight of the mats. Only then is the remaining oil carefully squeezed out of the mats. Franco gains just 1 liter from 25 kg. The two single-vineyard oils Cru Gaaci DOP and Cru Riva Gianca DOP come from trees that grow on the Riviera dei Fiori, the western coast of Liguria, both from the Valle Argentina.

    The small fruits of the Taggiasca produce a particularly mild olive oil. It is the typical, autochthonous variety of Liguria. The Monocultivar impresses with its butteriness, low bitterness and delicate nut and herb aromas. Slightly peppery finish.

    Mosto ROI
    Naturally cloudy oil of light yellow color; the scent is reminiscent of ripe olives and dried leaves. The gentle sweetness of the nutty taste gives way to a slight spiciness in the aftertaste. Franco`s oil for every day.
