    The best saffron quality comes from Spain and is marked with the seal -De La Mancha- or -Coupe-. Saffron is one of the most expensive spices in the world. These features are marked by appropriate certificates. For a good quality it is recommended to buy whole threads instead of powders. With the powder the saffron with the spice and coloring turmeric could be stretched. And by grinding, the saffron loses aroma faster. You can recognize saffron by its pleasant but bitter smell with a hint of smoke. If this is not the case, lower quality can be expected. Maybe something simple but quick to test, let the saffron in a gal with hot water for about 10 minutes. When the water is clear and yellow, the saffron is of high quality. However, if the water turns cloudy and reddish, this is a fake saffron. This degree of staining is measured in crocin. If saffron has a value higher than 190, it is called the highest level of quality. Further classifications:

    Class 3 - 110 - 150 Crocin
    Class 4 - 80 - 110 Crocin
