Saffron is obtained from the dried stigmas of the saffron crocus. Each flower contains three red stigmas, which are plucked by hand and then dried. 150,000 flowers yield 1 kg of dried threads. This explains its high price. It is used in cooking, for example, in risotto, paella, or bouillabaisse, and for seasoning seafood. This product is characterized by its strong coloring power and rich aroma.
