Oloroso. Actually, we could stop here. The maturation in these barrels of the Iberian peninsula is really well done. A prime example of how to give a sweet distillate a dry and spicy depth. In contrast to the usually very sweet PX matured bottlings, the focus is on dark compotes and dry fruits as well as on spicy oak. Very complex. Hard to believe that he does not come from Scotland, but from Holland.
