    For many generations, the Ursini family in the province of Chieti has been known for their green fingers. The farmers in Abruzzo are therefore happy to make use of their knowledge and the relationship is close. Giuseppe Ursini presses the olives from his own 1,300 trees and the fruits manually harvested by small farmers in his ultra-modern mill on the same day of harvest. He then creates the optimal cuvees from the various oils and determines their character. Because he works closely with his chefs, who develop unusual Mediterranean delicacies with olive oil in the company`s own kitchen, he has a confident taste and a precise idea for the use of oils in the kitchen. These specialties are just as popular with Italian gourmets as Ursini oils.

    A masterpiece is the top cuvee Opera Mastra made from the best olives of the Gentile di Chieti, Nebbio, Toccolana and Leccino varieties. It is composed by Giuseppe Ursini every year after the olive harvest and is an indispensable part of the good cuisine in the top restaurants in Abruzzo.     MONASTERY OIL, TERRE DELL ABBAZIA
    This extra virgin comes from the groves of the former Benedictine monastery of San Giovanni in Venere, which are cultivated by several farmers. They deliver their olives, such as the Gentile di Chieti and Nebbio varieties, to Ursini, who presses them into a medium-fruity extra virgin with notes of sweet almond. A very good everyday oil!

    OLIVE OILS WITH AGRUMEN AND HERBS
    Agrumen and peperoncini are pressed at the same time as the olives. Ursini`s chefs make an infusion from the herbs and macerate the garlic before adding it to the oil. The oils are not intrusive flavor explosions, but rather natural, sensitive seasoning oils.

    SEASONING OILS

    SOUS VIDE SEASONING OILS
    Ursini also uses the vacuum cooking method for special seasoning oils for meat, fish and vegetables. Targeted mixtures of herbs, spices and citrus peels are sealed together with an olive oil cuvee in 5 liter tubes and heated in a water bath at a low temperature. The result is absolutely convincing.
