Xanthazoon® is made of xanthan (E 415) and is a fermentation product. It offers good thickening and stabilizing properties and is widely used as an additive in dressings and sauces, bakery products, beverages, dairy products, fruit preparations and ice cream. Xanthazoon® is soluble in both cold and hot liquids and maintains the viscosity of the products over a wide temperature range, pH range (acid stable) and high salt / ion concentrations. It is also known for its emulsifying abilities, it prevents the masking of the aroma and improves the mouthfeel of viscous products. For culinary applications, Xanthazoon® can stabilize foams, emulsions (dressings, sauces, etc.) and beverages, and keep small particles such as herbs or aroma capsules in suspension. Viscosity, stability and mouthfeel can be influenced and improved by additional mixing of Locuzoon® or Guarzoon®.
