Sucro is an emulsifier derived from sucrose which forms a sugar ester through a special link between sucrose and fatty acids. Due to its high stability, this emulsifier is used to bind oil with aqueous solutions. Sucro is water-like and must first be dissolved in water. This emulsifier also has astringent properties and allows the production of foam. Properties: Powdery, insoluble in fat. Cold-solubilized in water, faster soluble in heat. Then slowly add to the fatty medium.
