Sliced green olives marinated in brine to be used in salads, with pasta or on pizza. Green olives are picked when they are still unripe. Before being placed in brine, they are treated with lye. This process reduces the bitter substance content of the not yet ripe fruits and improves the consistency of the fruit pulp.
