Green olives and anchovies - this is an unusual and interesting flavor combination that is known as an aperitif, but is also popular as a bar snack. The taste is crispy and spicy. Green olives are picked when they are still unripe. Before being placed in brine, they are treated with lye. This process reduces the bitter substance content of the not yet ripe fruits and improves the consistency of the fruit pulp. The anchovies also make the olives taste like anchovies. Ideal as a decoration for cold plates.
