Tete de Moine was first mentioned in 1192 as cheese from the Bellelay Monastery. Old documents prove that this cheese served as a means of payment. He is not cut, but scraped. The easiest way to scrape it is with the girolle - a device specially designed for this purpose. The upper bark of the cheese is removed. By turning the girolle rosettes can be scraped off the cheese. They look a bit reminiscent of the tonsure of monks, which presumably led to the naming of the monk`s head. The Tete de Moine has a pronounced spicy and delicate taste.
