This dried meat is referred to herein as Morseau de viande setza, from which the name derives Mocetta. From the creators of the Jambon de Bosses from the meat of Italian cattle. Its color is a beautiful deep red. Its flavor is spicy and has fine herbal notes. Served in thin slices as carpaccio, with full red wines and a fresh white bread. Really delicious!
