When wine producers Schola Sarmenti in Puglia Nardò especially the red varieties Negroamaro and Primitivo are grown. Both varieties are autochthonous and cultivated for hundreds of years in Salento. They grow there not on high poles, but at low cut trees, the Alberelli. Schola Sarmenti operates a rigorous yield reduction, only the best grapes ripen. The harvest is done manually and the grapes are immediately brought to the basement of the old winery in small stairs.
