There is a good reason to use juniper barrels only. These characterize the balsamico with a really extraordinary note: tart and yet soft and sweet by the 16 years of maturity. Exactly this tension makes the Gran Riserva so desirable. Best for game dishes, mature cheeses and hearty meat variations, such as beef fillet with cocoa noodles and Gorgonzola sauce.
