
Morsweet - Glucose syrup in powder form, glucose
This powdered glucose is used in canning, confectionery and pastry making as well as ice cream, candy or sherbet. According to the manufacturer`s instructions, the powder content is about 4% of the total mass. At 1 kg total mass = 40g glucose powder. The 40g then you have to deduct from the originally, needed amount of sugar. Instead of 800g of fruit puree and 200g of sugar, take 800g puree, 160g sugar and 40g pure powder. Mix sugar and powder together and process normally.
