Various potassium salts of tartaric acid, which occur bound in many fruits. In the home, potassium tartrate (cream of tartar) is used as baking powder; the slow release of the acid leads to a leavening of the dough and the formation of pores. It is said to intensify the fruit flavor. It inhibits bacterial growth. Uses: for all products containing fruit (jellies, preserves, candied fruit, jams, compotes = 3.5 g/kg; fruit and vegetable juices = 150-250 g/hl; terrines, pates, aspics, parfaits, sausages of all kinds = 0.5-1 g/kg)
