Raw marzipan, 2:1 mixed - modeling marzipan, 35% Mediterranean almonds, Lubeca
Marzipan paste of the finest flavor, made from sweet, aromatic Mediterranean almonds. Especially suitable for modeling. This paste is processed with invertase in a 2:1 ratio. At Lubeca, the white-peeled almonds are finely rolled with sugar and water using granite rollers. This gives the marzipan a slightly fibrous texture for the perfect bite. The paste is then roasted in copper kettles. During this process, the Maillard reaction occurs, aided by the catalytic effect of the copper. This gives the marzipan its characteristic roasted aroma and classic, unmistakable flavor. Rapid cooling of the paste ensures the preservation of the valuable almond aroma.
