Locuzoon (locust bean gum), Biozoon, E 410
Locuzoon® consists of locust bean gum (E 410). In cold liquids, it acts as a thickening agent similar to xanthan gum for processing dairy products, desserts, fruit preparations, as well as dressings and sauces. If Locuzoon® is dissolved in a little cold water beforehand and stirred thoroughly into boiling liquids, a heat-stable gel forms upon cooling. Locuzoon® is effective over a wide pH range, meaning it can also be used in acidic liquids and is not very sensitive to high ion or salt concentrations. In frozen gels, Locuzoon® delays the formation of crystals, thus ensuring a more pleasant mouthfeel of frozen products. Locuzoon® can be used effectively in combination with Xanthazoon®, which can form a strong gel network.
