Locuzoon® consists of locust bean gum (E 410). It acts as a similar thickener in cold liquids, such as xanthan gum for dairy products, desserts, fruit preparations, dressings and sauces. If you dissolve Locuzoon® in a little cold water and stir well in boiling hot liquids, a heat-stable gel will form on cooling. Locuzoon® has a wide pH range, meaning that it can also be used for acidic liquids and is less sensitive to high ionic or salt concentrations. In frozen gels, Locuzoon® delays the formation of crystals, thereby providing a more pleasant mouthfeel for frozen products. Locuzoon® works well with Xanthazoon®, creating a strong gel network.
