Gellazoon® consists of Gellan Gum (E 418), a water soluble polysaccharide, which is obtained by fermentation. This multifunctional gelling agent can be used alone or in combination with other products (sodium citrate, pectin, sugar) to produce a wide range of interesting textures. Gellan gum is widely used in the food industry for the production of gelled products such as desserts, aspic, fruit preparations, etc. Gellazoon® is characterized by high clarity (in both color and aroma). Gellazoon® LOW forms very clear, unelatic and brittle gels. By combining both variations, a variety of textures can be obtained.
