Citrate Kit pH - Citrate + pH - Value Test Strips, Texturizer, Sosa, E331iii
The kit, using the included test strips, allows you to determine the pH value of a molecular preparation and adjust it with citrate if necessary. The citrate is added slowly until the desired pH value is reached. The optimal value for spherification is between 4 and 5.
