Calazoon® is calcium lactate (E 327) and is used as an adjuvant for various texturizers (alginate, gellan and iota), which require ions to form gel structures (calcium or potassium). These gels are perceived to be particularly heat-stable, firm yet flexible or fast-gelling and, because of these properties, are of interest to the catering industry. For some preparations rich in calcium or potassium-rich ingredients such as milk or sour whey. For special applications, such as For example, when molding gel capsules, the calcium or potassium concentration must be higher than most common kitchen ingredients. For these applications Calazoon® is needed, which is characterized by a very mild and pleasant taste.
