
Golles Balsam - Wine vinegar, Trockenbeerenauslese (TBA), 6% acidity
A balsamic vinegar made from Trockenbeerenauslese grapes. The exceptionally valuable juice of these grapes makes the typical reduction process for balsamic vinegars entirely unnecessary, as the concentration of flavor and aroma compounds has already occurred naturally on the vines. The wines come exclusively from the collection of the internationally acclaimed winemaker Alois Kracher. This wine vinegar is lighter in color than Aceto Balsamico, yet its aromatic profile is more vibrant than that of most balsamic vinegars. It pairs perfectly with seafood, a variety of dishes with Far Eastern influences, Mediterranean salads, and as a refined seasoning for dark stocks and sauces.
