Produced using the traditional method of fermenting concentrated fruit juice and aged in wooden barrels until perfect flavor harmony is achieved. With its opulent fruitiness from fully ripened pears, this balsamic vinegar is recommended for hearty salads such as Waldorf salad or chicken salad with endive, but also for adding a touch of refined acidity to fully mature cheeses like Roquefort or Vacherin.
