Australian pepper is an outstanding representative of exotic spices. It has a bushy aroma that is first sweet and then hot peppery, but does not last very long. Can be used as a wort or garnish and best processed with a mortar. Tasmanian pepper is not just something for Australian specialties like emu hamburgers and kangaroo steaks. Marinate pieces of meat with pepper and oil and briefly fry or grill. Highly recommended for: stew-like dishes, with legumes, pumpkin, in sauces and butter or with pasta, beef and venison. Pepperberries are a good counterpart to corn. Cream sauces give them a light burgundy color.
