From the Smooth series by Callebaut: dark, pleasantly sweet, and ideally suited to sour and bitter components. They resemble small chocolate drops and are ideal when only a small amount of chocolate needs to be melted, as they are easy to portion. Once melted, they can be used to coat desserts and pralines, and for decoration. The chocolate callets consist of sugar, cocoa butter, cocoa mass, soy lecithin, and Bourbon vanilla.
