Liquorice root, ground
The aroma is reminiscent of anise or fennel, but even stronger. The taste is intensely sweet and warming. Licorice has always been considered more of a medicinal plant than a spice. The strong and slightly overpowering sweetness of this plant seems to complement neither sweet nor spicy dishes. However, small amounts of licorice can significantly enhance Chinese five-spice powder. Of course, the traditional method of making licorice involves boiling and reducing licorice root.
