Black natural - short grain rice, Piedmont, ideally suited for risotto
A whole grain rice with a natural black husk. It smells like fresh bread, is very nutritious, and rich in trace elements and protein. A few years ago, a Chinese expert succeeded in crossbreeding this variety, which originates in Asia, with local plants so that it can also thrive in our climate zone, specifically in Piedmont. Black rice is excellent for risotto. It`s ideal with buffalo mozzarella. Simply finish the risotto with butter and Parmesan, top with thick slices of mozzarella, and serve. The subtle lactic acidity of the rice complements the nutty, slightly salty flavor of the risotto perfectly.
