One of the most prized lentil varieties is cultivated in the area around Castelluccio in Umbria, at an altitude of 1400 meters. It is grown without the use of chemicals and according to a crop rotation: lentils - rest period - grain. The average annual production on the Castelluccio plateau is only a few hundred metric tons. The special advantage of this small legume is that it does not need to be soaked before cooking. It withstands cooking without losing its skin or becoming mushy, and the kernel remains firm to the bite. These mountain lentils also have a nutty aroma. They are ideal for both hot and cold dishes.
