These dark purple-red, small olives are harvested when fully ripe and then stored in an aromatic brine for a year. The sweet, deep olive flavor is typical of Coquillos olives (pronounced: coe-kee-ose). Particularly suitable with tapas, antipasti, salads (especially Salad Nizza) and Mediterranean dishes. This variety also impresses those who don`t normally like olives.
