The seeds contain essential oils that give them a spicy, sweet, and aromatic flavor. Since these oils evaporate easily, the seeds should only be crushed or ground as needed. Cardamom is a common spice in Asian cuisine and is one of the main ingredients in Indian masalas and the curry powder inspired by them. Cardamom is slightly spicy and goes well with meat, fish, vegetables, compote, and pudding. It is also suitable for making sausages and bread and is popular as a cake spice, for marinades, or in punch. In Arab countries, its aroma is valued in coffee and tea. Green cardamom originally comes from southern India and Sri Lanka. Today, it is cultivated in Guatemala and in countries with similar climates.
