The linguine comes from Liguria. They have the shape of a small, flat and narrow tagliatella and are between 1.45 and 1.60 mm thick. Linguine is particularly suitable with sauces with fresh tomatoes, vegetables or herbs. When served with quick hot sauces, for example with cold-pressed olive oil, garlic, chili, anchovies, etc., they also taste excellent. You can also serve fish or seafood sauces or white sauces, ie sauces made with cream, mascarpone, soft cheese, possibly with the addition of spices such as saffron, horseradish, curry and ginger.
