Tapioca is a starch made from the roots of cassava that has been pressed into pearls. It is a popular binding agent for thickening desserts. Handling the beads is much easier than flour. Place the pearls one at a time in rolling water or sauce (fruit). Then let it simmer slowly for about 15 minutes. If you would like to have the pearls individually, remove them from the stock after cooking and put them in cold water or juice.
