Raising agents for baked goods. Consists of at least two chemical components: a carbonic acid-forming substance and an acidulant. Combined with moisture and heat, they set a chemical process in motion. The formation of gas bubbles causes the dough to become loose. If baking powder is used as a leavening agent, the dough does not need to rise but can go straight into the oven. Baking powder is particularly suitable for cakes and pastries. Even heavy doughs with a lot of fat, sugar, nuts and raisins become airy.
