Fruity. Grassy. Spicy. This bright green, unfiltered oil has a fruity, slightly tart flavor and an incomparable aroma of fresh grass and herbs. It finishes with a peppery spiciness. A true delight on fish, cauliflower, Brussels sprouts, and all pasta dishes with tomatoes, herbs, or mushrooms. Due to its high sediment content, it is not suitable for frying. What makes it special is the harvest: the oil is produced only from the first 14 days of harvest, unlike conventional oils which are harvested over 6-8 weeks.
