Native to Australia, Tasmanian pepper is a prime example of an exotic spice. It offers a rich, bushy aroma that begins sweet and then becomes sharply peppery, though the flavor doesn`t last very long. It can be used as a seasoning or garnish and is best prepared with a mortar and pestle. Tasmanian pepper isn`t just for Australian specialties like emu hamburgers and kangaroo steaks. Marinate pieces of meat with pepper and oil, then briefly fry or grill. Highly recommended for: stews, with legumes, pumpkin, in sauces and butter, or with pasta, beef, and game. Pepperberries are a good complement to sweetcorn. They impart a light burgundy color to cream sauces.
