San Pietro in cera dapi, hard cheese wrapped in beeswax, Latteria Perenzin
This hard cheese, made from raw cow`s milk, matures for at least 16 months. Following an old Venetian tradition, it is coated with a layer of beeswax. This was intended as protection when the cheese was taken as provisions to sea. The wax gives the cheese a honey and vanilla aroma. It should be removed before eating. The wax also imparts a subtle sweetness to the otherwise spicy cheese.
