Traditional AOP cheese from the Auvergne region. Our Saint Nectaire is a farm-made cheese, meaning it was produced on a single farm. It matures for approximately 28 days in a rock cellar, traditionally resting on rye straw mats. The cheese has a nutty, slightly earthy, and full-bodied flavor. Its appearance is quite robust. The gray, fuzzy coating is complemented by other ripening molds in shades of yellow, orange, and black. It tastes best when it looks like this.
