Clipfish - Bacalao / Bacalhau, dried
Bacalhau is a staple of Mediterranean cuisine. Cod, pollock, or haddock are primarily used to make bacalhau, or codfish. After removing the head and gutting, the fish are hung over sticks to dry; this preserves them. This codfish is salted and then dried! Without the salting process, it is also called stockfish.
